Mousselines are mixtures of light meringue buttercream and fresh fruit purees, liquors, coffee reductions, citrus curds, or nut pastes, and have a light, creamy texture.
Meringue Buttercream is a combination of sugar, egg whites, pure butter, and natural extracts and liquors.
Swiss Rolled Fondant is a sugar-based dough that gives cakes a satiny, smooth look. Can be flavored and colored.
Ganache is a dense mixture of chocolate and cream, and has a bold, rich flavor.
