Of all the venues where I’ve delivered our cakes over the years, Rosecliff mansion in Newport, Rhode Island is where I feel most at home.  Its elegant grounds and ballroom are the perfect setting for my classic wedding cake designs; I draw inspiration from the well-kept grounds and the elaborate gilded décor.  In each of our 14 wedding seasons we’ve delivered at least one very special cake for a Rosecliff wedding.

With its ornate painted ceiling and intricate moldings, Rosecliff always inspires me.

I knew that Joyce at Stoneblossom Floral and Event Design would put forth a breathtaking array of flowers, as she always does. Look at the gorgeous bride’s bouquet!  Joyce always gives me a detailed list of types and colors of the wedding flowers, which makes it easy to choose the types and colors of sugar flowers that my staff and I will handcraft. Blushes and pinks make a great combination with the gold details!

 Sketching is the critical and most difficult step in my creative process.  The design has to fit the venue, flowers, and other elements that the client has chosen, and most importantly the client’s taste.  Once the client approves the final sketch, my staff and I use it as a blueprint so that we can schedule our production, which can take weeks or even months: the type, quantity, and colors of sugar flowers to make; the flavors, sizes, and shapes of cakes to bake and fill; the sequence of making and applying other sugar decorations; and the assembly of the cake tiers, sometimes on site, so that we can deliver our confectionery masterpiece.

For this cake we created a variety of handcrafted flowers, including peony, garden rose, spray rose, ranunculus, hydrangea, sweet pea, and freesia in shades of cream, blush, and pinks.  The tiers were accented with gilded borders, pearls, and appliques that were molded from fondant, giving the cake a more regal look.  We custom made some of the silicon presses used to make the borders. In addition, some of the tiers were embellished with fine embroidery details piped with royal icing in pearl and gold.
